Now, with the importation of the South American “CHIMINEA” outdoor fire pot we will now be able to spend more time outside in the evenings.
Stoked up with wood and even certain garden rubbish the Chiminea takes the chill out of the air, with heat being felt up to ten feet away. The fire pots are individually hand made of Terracotta and sit on an iron base to allow circulation of the air underneath. They range in height from 70cm to 110cm. The opening can be positioned towards the airflow to encourage the fire or away from it to add shelter and moderate the fire. The whole pot heats up to radiate heat.
Traditionally, these fire pots were Mayan bread ovens and were found right down the Eastern seaboard of Central and South America. Today, they are commonly used – in South and North America, New Zealand, parts of Europe and recently Australia - as an outdoor fireplace lending heat and ambiance to outdoor living area whilst adding another cooking option. Food can be cooked on the coals, on racks or skewers in the main oven or on a grill over the top. The unbridled heat of wood fire in a small cavity means foods cook quickly and with the characteristics of a true braai.
To prepare your Chiminea as an oven, prepare a wood fire so that it is burning at a medium rate – not flaming - but also not at low embers. Place a grill (any small grill – even a cake rack will do) on the wood. Then place a few unglazed terracotta tiles or similar on the grill. When these heat you have a neat little oven to make incredible breads or use as a base for cast iron frying pan. To cook fish over the top - Place rack on the top of the chiminea flue. Wrap seasoned whole fish or fillets in tin foil and place on the rack, allowing ten minutes each side for a medium sized fish.
